Tex-Mex with Spinach Bake

2 c
biscuit mix
1/2 c
cold water
1 lb
ground beef
1 pkg
taco seasoning
1 c
10 oz
frozen spinach, thawed and squeezed dry
1 c
ricotta cheese
1/3 c
chopped scallions
1 1/2 c
shredded cheddar cheese
1 c
sour cream
egg, slightly beaten


1Heat oven to 350.
2Combine baking mix and 1/2 cup cold water; stir until soft dough forms.
3Press dough into bottom of greased 13x9" baking dish.
4Cook ground beef in large nonstick skillet until brown.
5Stir in taco seasoning mix (dry) and 1 cup water.
6Bring to a boil; reduce heat and simmer 15 minutes, stirring occasionally.
7Spoon mixture over dough.
8Combine spinach, ricotta cheese and onions; spread over ground beef mixture.
9Combine cheddar cheese, sour cream and egg; spoon evenly over spinach mixture.
10Bake 30 minutes or until set.
11Let stand 5 minutes before serving.
