Ingredients
- 2 cups biscuit mix
- 1/2 cup cold water
- 1 pound ground beef
- 1 package taco seasoning
- 1 cup water
- 10 ounces frozen spinach, thawed and squeezed dry
- 1 cup ricotta cheese
- 1/3 cup chopped scallions
- 1 1/2 cups shredded cheddar cheese
- 1 cup sour cream
- 1 egg, slightly beaten
How To Make tex-mex with spinach bake

Step 1Heat oven to 350.

Step 2Combine baking mix and 1/2 cup cold water; stir until soft dough forms.

Step 3Press dough into bottom of greased 13x9\" baking dish.

Step 4Cook ground beef in large nonstick skillet until brown.

Step 5Stir in taco seasoning mix (dry) and 1 cup water.

Step 6Bring to a boil; reduce heat and simmer 15 minutes, stirring occasionally.

Step 7Spoon mixture over dough.

Step 8Combine spinach, ricotta cheese and onions; spread over ground beef mixture.

Step 9Combine cheddar cheese, sour cream and egg; spoon evenly over spinach mixture.

Step 10Bake 30 minutes or until set.

Step 11Let stand 5 minutes before serving.
