taco seasoning
1 c
10 oz
frozen spinach, thawed and squeezed dry
1 c
ricotta cheese
1/3 c
chopped scallions
1 1/2 c
shredded cheddar cheese
1 c
sour cream
egg, slightly beaten

How to Make Tex-Mex with Spinach Bake


  • 1Heat oven to 350.
  • 2Combine baking mix and 1/2 cup cold water; stir until soft dough forms.
  • 3Press dough into bottom of greased 13x9" baking dish.
  • 4Cook ground beef in large nonstick skillet until brown.
  • 5Stir in taco seasoning mix (dry) and 1 cup water.
  • 6Bring to a boil; reduce heat and simmer 15 minutes, stirring occasionally.
  • 7Spoon mixture over dough.
  • 8Combine spinach, ricotta cheese and onions; spread over ground beef mixture.
  • 9Combine cheddar cheese, sour cream and egg; spoon evenly over spinach mixture.
  • 10Bake 30 minutes or until set.
  • 11Let stand 5 minutes before serving.
