The only story to this recipe is my kids love it. It is a very tasty. filling meal. Serve with your favorite taco condiments, or by itself. I hope you try it. My photos

Ingredients For tater tot taco casserole

  • 2 lb
    ground beef
  • 1
    onion, chopped
  • 2 clove
    garlic, minced
  • 1 - 4 oz
    can, green chiles
  • 1 pkg
    taco seasoning mix, i used hot
  • 1 can
    black beans, drained
  • 1 pkg
    frozen corn - 16 oz.
  • 1/2 tsp
    salt ( optional )
  • 1/2 tsp
    cumin ( optional)
  • 1/2 tsp
    chili powder ( optional )
  • 1 pkg
    tater tots, i used extra crispy
  • 4 c
    shredded, mexican cheese - divided
  • 1 c
    sour cream
  • 1 - 20 oz
    red enchilada sauce
  • 1 sm
    can, sliced black olives, drained

How To Make tater tot taco casserole

    Preheat oven to 350 degrees F. Grease bottom and sides of a 9 x 13 baking dish.

    In a large skillet brown the ground beef, along with the onions and garlic; drain grease.

    Add the taco seasoning, green chilies, salt, cumin, chili powder, corn, and beans to the browned meat; heat until thoroughly heated.

    In a large bowl, combine the meat mixture, 3 cups of the cheese, sour cream and the tater tots; stir to mix evenly.

    Pour about 1/4 of a can of the enchilada sauce in the bottom of the greased baking dish. Add the meat and tater tot mixture; spread out evenly and pat down.

    Top with the remaining enchilada sauce. Bake in the preheated oven for 50 minutes.

    Remove from the oven and top with the remaining cheese and black olives. Return to the oven and bake an additional 10 minutes or until the cheese has melted.

    Serve with your favorite condiments. I just served it with sour cream and jalapeno's. It's delicious!
