Don't discount the tater tot casserole! This one is one I tweaked for my son. I wanted him to eat more veggies and he loved it in the casserole! Plus it's delicious for everyone. You can make it a bit more healthy by changing to lower fat cheese, a healthy choice soup, and skim milk. Either way it's a yummy, hearty dinner!

Ingredients

  • 1 - bag frozen tater tots
  • 1 pound ground beef, browned and drained
  • 1 pound bag frozen mixed veggies, cooked halfway according to directions
  • 1 can cream of mushroom soup
  • 1 - envelope onion soup mix
  • 1 can milk
  • 2 cups shredded sharp cheddar cheese

How To Make tater tot casserole

  • Step 1
    In buttered 9x13 Pyrex dish, spread 1/2 of the frozen tater tots. Top with the cooked ground beef. Spread half-cooked veggies on top of beef.
  • Step 2
    In small saucepan, mix soups and milk. Stir until smooth and bubbly. Pour over top of veggies.
  • Step 3
    Top sauce with cheese, then sprinkle on remaining tater tots. Bake at 350 for 30-45 mins. Place under broiler for 3-5 mins before serving for extra crispy tots.
