Ed Mayfield

Found this recipe on the net and have tweaked to my taste. This is where expression 'easy as pie' originated! Served with chunky guacamole and refried beans. MMMMMM.

How to Make Tasty Taco Pie

  1. Preheat oven to 400 degrees.
  2. Coat a 10 inch pie pan with cooking spray. Mix crushed tortilla chips with egg white, then place this mixture evenly on bottom and sides of pie pan to form crust.
  3. Bake for 15 minutes.
  4. Place small amount of olive oil in large skillet and cook onions and garlic until translucent, then add ground beef and cook until browned. Then add salt, taco seasoning mix and salsa and mix well. Simmer for about 10 minutes.
