I love to try diffent ways to make meatloaf..This one I really like and even my husband said this was the best meatloaf he had ever tasted and he's very picky, so thought maybe I should share it with all of you..so here you are, hope you like it

Ingredients For tasty spicy meatloaf with sauce

  • 1 lb
    ground beef
  • 1 sm
    onion
  • 1/4 c
    diced carrots
  • 3-5 slice
    jalapeño pepper roughly chopped
  • 1/4 c
    milk
  • 1
    egg beaten
  • 1 Tbsp
    basil
  • 1 Tbsp
    oregano
  • 1/2 pkg
    lipton onion soup mix
  • 1/2 c
    grated-day old cornbread muffins, approx 3
  • 1/2 can
    tomato sauce (basil, garlic, oregano seasoned)
  • 2 slice
    raw bacon
  • 1/2 can
    tomato sauce (basil, garlic, oregano seasoned
  • 1-2 Tbsp
    mustard
  • 1 Tbsp
    fig spread or jam

How To Make tasty spicy meatloaf with sauce

    Preheat oven 350 Prepare loaf pan or oblong pan with large piece of foil placed in opposite direction this will avoid the loaf from sitting in the grease while baking, making for an easy clean up. In a medium sized bowl mix together, onion, carrots, jalapenos, basil, oregano, pepper Lipton onion soup mix, ½ can of tomato sauce, milk, grated cornbread muffins with beaten egg.

    Add ground beef, crumbling between fingers to make sure all is incorporated. Mix well and form into a meatloaf. Place meatloaf on top of foil in pan, place strips of bacon on top Bake on middle rack for 45 mins. When done cover with the foil that is draped over the sides of the pan. Let rest while you prepare the sauce.

    SAUCE: In a small sauce pan on low to medium heat add tomato sauce, mustard Jam, and a little water if too thick. Simmer until jam is well blended. Serve over meatloaf and enjoy!! *note: according to taste add or delete more or less jalapeno peppers Also you can add them to the sauce for more spice
