This is a recipe taken from Southwest Cooking cookbook but tweaked to suit my family's taste.

Ingredients

  • 1 tablespoon oil
  • 1 - onion, yellow, chopped
  • 1 pound ground beef
  • 1 - envelope taco seasoning
  • 1 can mexican style chopped tomatoes, undrained
  • 1/2 cup water
  • 1 can black beans, rinsed and drained
  • 1 can mexican corn, drained
  • 1 package corn bread/muffin mix
  • 1 cup shredded cheddar cheese

How To Make tamale pie

  • Step 1
    Prepare corn muffin mix according to package directions, set aside.
  • Step 2
    In skillet with oil, saute onion until tender, add ground beef and cook until beef is browned; drain excess oil.
  • Step 3
    Add taco seasoning, tomatoes and water, simmer 5 minutes, stirring occasionally.
  • Step 4
    Add black beans and corn and simmer for 10 minutes or until heated through.
  • Step 5
    Turn mixture into a 2 quart casserole dish. Spoon corn muffin mix evenly over casserole. Sprinkle with shredded cheese. Bake at 400 degrees for 15 minutes or until muffin mix is golden and filling is bubbling. Serve with sour cream and salsa on the side.
