This is a quick and easy recipe to make after work. It fits in nicely with busy schedules. It can easily be doubled for big gatherings or for freezing. I always double the recipe for my family. I have six family members that will eat the whole pot! I hope you enjoy!

Ingredients
- 1 1/2 pounds ground beef
- 14 1/2 ounces can diced tomatoes
- 8 ounces tomato sauce
- 1 can diced tomatoes with green chilies (ex. rotel)
- 2 cans blue runner red beans cream style (not the large can)
- 1 can whole kernel corn
- 1 package taco seasoning mix
- 1 can beef broth
- GARNISHES
- - sour cream
- - mexican blend shredded cheese
- - guacamole
- - salsa
- - tortilla chips

Step 1Brown ground meat in a skillet with chopped onions, then drain grease

Step 2Put ground meat with onions in a soup pot and add all other ingredients, stir to combine, then bring to simmer and let cook at least 30 minutes to combine everything.
