Funny story. Yesterday on JAP we all got into a discussion on the bundt chicken that I never heard of, but now its a must try for me. But I was dreaming of it last night and for some reason was dreaming about one of the young girls I babysit and her favorite is Taco hamburger helper, so in my dream I had made this meatloaf in a bundt pan. Well when I got up I was on a mission, so I had to make this.Its a combo of the hamburger helper and a mexican meatloaf in a bundt pan!

Ingredients

  • 2 pounds lean ground beef
  • 1/3 cup brown rice, uncooked
  • 1/2 cup crushed doritos (nacho cheese)
  • 1/4 cup salsa, chunky
  • 1 - 1.25oz pkg taco seasoning
  • 2 - beaten eggs
  • - jar salsa con queso

How To Make taco queso bundt meatloaf

  • Step 1
    Lighty combine all ingredients except salsa queso.
  • Step 2
    Form large meatballs and place in bundt pan overlapping, then slighty pat into pan. Top with some salsa or taco sauce. Bake in preheated 350 oven for 45min.
  • Step 3
    Let meatloaf rest for 10 min. Flip onto plate. melt cheese sauce and drizzel on top. Slice and serve with on lettuce with cilantra, salsa, and sour cream.
