I like to dice up the tops of the peppers A's add to the mixture for color and taste.

Ingredients

  • 1 pound ground chuck
  • 1 small onion diced
  • 1 can corn drained
  • 1 can black beans drained and rinsed
  • I jar salsa our picante
  • 1 cup rice
  • 1/2 cup shredded cheese your choice
  • 4 medium peppers. color of choice
  • 1 package taco seasoning. ( our to taste )

How To Make taco peppers

  • Step 1
    Brown meat and add taco seasoning
  • Step 2
    Add diced onions
  • Step 3
    Add rest of ingredients one at a time and incorporate
  • Step 4
    Cover and let simmer while preparing peppers.
  • Step 5
    Cut tops off peppers. Clean out insides and rinse out with water.
  • Step 6
    Plane peppers in nonstick pan and place in 350 degree oven for 10-15 minutes.
  • Step 7
    After removing peppers from oven, full peppers with meat mixture. Top with shredded cheese. Return to oven and cook for 15 minutes. 350 degrees.
