I created this recipe for dinner one evening when I wanted to do something different with a pound of ground beef. It turned out so well my husband said I should put it on just a pinch. In his words, it's very tasty.

Ingredients For taco pasta

  • 1 lb
    ground beef
  • 1/2
    onion, diced
  • 1/3 c
    green pepper, diced
  • 1
    jalepeno, diced
  • 1 tsp
    chili powder
  • 1 1/2 tsp
    cumin
  • 1 tsp
    garlic powder
  • 1 can
    black beans, drained
  • 1 can
    corn, drained
  • 1 can
    diced tomatoes with green chilis
  • 1/2 tsp
    liquid smoke flavoring
  • 2/3 c
    water
  • 1 lb
    pasta (i used fusilli)
  • 1/2 c
    sour cream
  • 2 c
    velveeta cheese, cubed
  • 4 slice
    american cheese
  • 1/2 c
    shredded cheddar
  • salt and pepper, to taste

How To Make taco pasta

    Boil pasta per package directions and drain well.

    Brown ground beef with onions and peppers. Add seasonings and water. Simmer for 5 minutes.

    Stir in tomatoes, beans and corn,sour cream, velveeta and american cheese. Simmer till cheese is melted.

    Add pasta to hamburger mix. Stir until mixed. Sprinkle with shredded cheddar and serve.
