    sour cream
  • 1/3 c
  • 3 Tbsp
    taco seasoning mix
  • pinch
  • 1 c
    crushed tortilla tips
  • 1 c
    cheddar cheese, grated
  • 2 lb
    ground beef

How to Make Taco Meatloaf


  1. In a large bowl, whisk egg, sour cream, salsa, taco seasoning mix, salt together. Add the crushed tortilla chips and 1/2 cup cheese. Add ground beef and mix well.
  2. Shape into a loaf in baking dish. Bake at 350 degrees for 60 -70 minutes. Time will depend on how thick you make your loaf.
  3. While hot, place on serving platter. Top with grated cheese. Loosely cover with foil so the heat from the meat loaf will melt the cheese. Serve with extra salsa on the side.
