taco casserole
My kids love nachos but it isn't a substantial meal. I've found they like this just as much but it is much more filling. It can be modified to be healthier by using ground turkey and fat-free/low fat cheese and sour cream.

Ingredients
- 1 package corn bread mix
- 1 - egg
- 1/3 cup milk
- 3 cups ground beef
- 1 package taco seasoning mix
- 1 can black beans
- 1 cup sour cream
- 1 cup mexican blend shredded cheese
- 1/2 cup diced onion
- 1 medium diced tomato
- 1 cup shredded lettuce
How To Make taco casserole

Step 1Combine the corn bread mix, egg and milk until blended.

Step 2Spray bottom of 8x8 pan with cooking spray and spread mixture .

Step 3Bake at 350 for 15 minutes.

Step 4Cook ground beef until done. Drain. Add taco seasoning.

Step 5Combine taco meat and beans, spread over corn bread.

Step 6Combine sour cream with 3/4 cup cheese. Spread over meat mixture.

Step 7Bake for 20-25 minutes or until heated through and cheese is melted.

Step 8Top with onion, tomato, lettuce and remaining 1/4 cup of cheese. (I usually let each person top their own to their own preference)
