My kids love nachos but it isn't a substantial meal. I've found they like this just as much but it is much more filling. It can be modified to be healthier by using ground turkey and fat-free/low fat cheese and sour cream.

Ingredients

  • 1 package corn bread mix
  • 1 - egg
  • 1/3 cup milk
  • 3 cups ground beef
  • 1 package taco seasoning mix
  • 1 can black beans
  • 1 cup sour cream
  • 1 cup mexican blend shredded cheese
  • 1/2 cup diced onion
  • 1 medium diced tomato
  • 1 cup shredded lettuce

How To Make taco casserole

  • Step 1
    Combine the corn bread mix, egg and milk until blended.
  • Step 2
    Spray bottom of 8x8 pan with cooking spray and spread mixture .
  • Step 3
    Bake at 350 for 15 minutes.
  • Step 4
    Cook ground beef until done. Drain. Add taco seasoning.
  • Step 5
    Combine taco meat and beans, spread over corn bread.
  • Step 6
    Combine sour cream with 3/4 cup cheese. Spread over meat mixture.
  • Step 7
    Bake for 20-25 minutes or until heated through and cheese is melted.
  • Step 8
    Top with onion, tomato, lettuce and remaining 1/4 cup of cheese. (I usually let each person top their own to their own preference)
