My kids love nachos but it isn't a substantial meal. I've found they like this just as much but it is much more filling. It can be modified to be healthier by using ground turkey and fat-free/low fat cheese and sour cream.

    corn bread mix
  • 1
  • 1/3 c
  • 3 c
    ground beef
  • 1 pkg
    taco seasoning mix
  • 1 can(s)
    black beans
  • 1 c
    sour cream
  • 1 c
    mexican blend shredded cheese
  • 1/2 c
    diced onion
  • 1 medium
    diced tomato
  • 1 c
    shredded lettuce

How to Make Taco Casserole


  1. Combine the corn bread mix, egg and milk until blended.
  2. Spray bottom of 8x8 pan with cooking spray and spread mixture .
  3. Bake at 350 for 15 minutes.
  4. Cook ground beef until done. Drain. Add taco seasoning.
  5. Combine taco meat and beans, spread over corn bread.
  6. Combine sour cream with 3/4 cup cheese. Spread over meat mixture.
  7. Bake for 20-25 minutes or until heated through and cheese is melted.
  8. Top with onion, tomato, lettuce and remaining 1/4 cup of cheese. (I usually let each person top their own to their own preference)
