I was going to make tacos with rice as the side for dinner but I thought oh what the heck just layer it like a lasagna and make it easier, it was good and I will make it like this again. I just forgot to take a pic of it

Ingredients For taco casserole

  • 2 lb
    ground beef, cooked and drained
  • 8 oz
    mozzarella cheese, shredded
  • 8 oz
    cheddar cheese, shredded
  • 4 oz
    pepper jack cheese , shredded
  • 1 pkg
    knorr taco flavored rice * ( or what ever brand that has a taco, spanish or mexican flavored rice)
  • 1 can
    (small)green chiles, mild, chopped
  • 1 can
    refried beans
  • 1 1/2 c
    picante sauce
  • 1-2 pkg
    taco seasoning mix
  • 10 lg
    tortillas, flour( or smaller ones will be ok)
  • sour cream for topping ( optional)

How To Make taco casserole

    Brown and drain ground beef, Cook rice as directed on package, to the ground beef, add taco seasoning, chiles, re-fried beans,picante sauce and cooked rice. Stir together well.

    Shred cheese or use the packed shredded, mix together.

    In a 9x13 casserole dish line with foil or parchment paper. Place a layer of tortillas a layer of ground beef mixture a layer of cheese. Repeat ending with a layer of tortillas and top with a a little cheese if you want. Place in a preheated 350 oven for about 20 minutes. Top with sour cream if you want
