These turnovers are great for a light lunch. Serve with a side salad.

Ingredients

  • 1 tablespoon olive oil
  • 1/2 pound ground beef
  • 2 cloves garlic, minced
  • 1 sweet potato, grated
  • 2 cups baby spinach
  • 2 sheets puff pastry, thawed
  • 2 ounces cheddar cheese
  • salt & pepper
  • 1 egg for egg wash on turnovers

How To Make sweet potato spinach & beef puff pastry turnovers

  • Step 1
    Preheat oven to 400 degrees. In a large skillet, heat oil over medium-high heat. Add the ground beef and cook until no longer pink. Add garlic and cook 30 seconds to 1 minute and remove skillet from heat.
  • Step 2
    Add the sweet potato and spinach, 1/2 tsp. salt and 1/4 tsp. pepper - toss to combine.
  • Step 3
    Place the pastry sheets on a work surface and cut each sheet in half which will make 4 rectangles. Divide filling evenly ON ONE SIDE OF THE RECTANGLE and then add cheese on top of filling leaving a 1/4 inch border.
  • Step 4
    Fold the dough over the filling and crimp firmly to seal edges. Using one egg, brush surface of turnovers. Bake on parchment paper until golden brown - approx. 20-25 minutes.
