Ingredients
- 1 tablespoon olive oil
- 1/2 pound ground beef
- 2 cloves garlic, minced
- 1 sweet potato, grated
- 2 cups baby spinach
- 2 sheets puff pastry, thawed
- 2 ounces cheddar cheese
- salt & pepper
- 1 egg for egg wash on turnovers
How To Make sweet potato spinach & beef puff pastry turnovers

Step 1Preheat oven to 400 degrees. In a large skillet, heat oil over medium-high heat. Add the ground beef and cook until no longer pink. Add garlic and cook 30 seconds to 1 minute and remove skillet from heat.

Step 2Add the sweet potato and spinach, 1/2 tsp. salt and 1/4 tsp. pepper - toss to combine.

Step 3Place the pastry sheets on a work surface and cut each sheet in half which will make 4 rectangles. Divide filling evenly ON ONE SIDE OF THE RECTANGLE and then add cheese on top of filling leaving a 1/4 inch border.

Step 4Fold the dough over the filling and crimp firmly to seal edges. Using one egg, brush surface of turnovers. Bake on parchment paper until golden brown - approx. 20-25 minutes.
