sweet and sour meatballs

I found this in an old Taste of Home magazine. Something different for dinner and the ginger snaps are a surprise ingredient. very good and filling.

Ingredients

  • 3 medium eggs
  • 1 medium onion chopped
  • 1 1/2 cups dry bread crumbs
  • 1 teaspoon salt
  • 2 pounds ground beef
  • 2 tablespoons vegetable oil
  • SAUCE
  • 3 1/2 cups tomato juice
  • 1 cup brown sugar
  • 10 - ginger snaps, finely crushed
  • 1/4 cup white vinegar
  • 1 teaspoon onion salt

How To Make sweet and sour meatballs

  • Step 1
    In a large bowl combine the eggs, onion,bread crumbs and salt. Crumble beef over mixture and mix well.
  • Step 2
    Shape into 1 1/2 inch balls.
  • Step 3
    In a large frying pan heat the oil and brown meatballs, in batches. Transfer to a greased 9x13 inch baking pan
  • Step 4
    In a sauce pan combine all of the sauce ingredients, bring to a boil and stir until the cookie crumbs are completely dissolved
  • Step 5
    Pour mixture over meatballs bake in a preheated 350 degree oven 35-40 minutes.
