sweet and sour meatball simmer

I found this recipe I had clipped from a Kraft foods magazine. I made it for me the other night and it was pretty easy and good. Plus it adds some different ingredients that you wouldn't normally think would go in sweet and sour meatballs.

Ingredients
- 3/4 pound (3/4 of 16 oz pkg.) frozen prepared meatballs
- 1 medium each red and yellow pepper, cut in chunks
- 1/4 cup water
- 1/4 cup apricot jam
- 1/4 cup catalina dressing (i used homemade)
- 2 tablespoons soy sauce
- 3/4 teaspoon each ground ginger and garlic powder
- 2 cups cooked rice
How To Make sweet and sour meatball simmer

Step 1Combine all ingredients except rice in large skillet; cover. Cook on medium heat 10 mins. stirring occasionally.

Step 2Increase heat to medium high; uncover. Cook 8-10 minutes. or till sauce is thickened and meatballs are heated through, stirring occasionally.

Step 3Serve over hot cooked rice. I added canned pineapple instead of peppers since I didn't have any peppers on hand. It was good and I didn't cook quite as long.
