swedish meatballs with buttered noodles

My husband and I love this recipe.The meatballs and gravy are so flavorful. serve with a nice tossed salad, and you have a great meal.

Ingredients

  • 1 cup seasoned bread crumbs
  • 1 medium onion, chopped
  • 2 - eggs,slightly beaten
  • 1/3 cup parsley, minced
  • 1 teaspoon coarsely ground pepper
  • 3/4 teaspoon salt
  • ABOVE FOR MEATBALLS
  • FOR GRAVY
  • 1/2 cup all purpose flour
  • 1 1/2 cups 2% milk
  • 1 cup cream
  • 2 cans 1 0z each of beef consomme, undiluted
  • 1 tablespoon worcestershire sauce
  • 1 teaspoon coarsely ground pepper
  • 1/4 teaspoon salt
  • FOR NOODLES
  • 1 package 16 oz egg noodles
  • 1/4 cup cubed butter
  • 1/4 cup minced parsley

How To Make swedish meatballs with buttered noodles

  • Step 1
    For meatballs: n large bowl, mix first six ingredients. Then add beef and mix lightly but thoroughly. Shape meat into 1 and 1/2 inch balls (about 36) and lightly brown, do not burn, in a skillet. With a slotted sppon, place meatballs on paper towel to drain.
  • Step 2
    For gravy: Stir flour into drippings and cook until lightly brown.Gradually whisk into mixture cream and milk. Stir in consomme, Worcestershire, salt and pepper. Bring to a boil, cook and stir about 2 minutes until thickened. Add meatballs and continue to cook 15 to 20 minutes more until meatballs are cooked through, stirring occasionally.
  • Step 3
    Meanwhile, cook the egg noodles according to the package directions. Drain and toss with the cubed butter. Put in a large bowl, and place meatball and gravy mixture on top of the buttered noodles, sprinkle with parsley and serve
