Ingredients

  • 1.5 lb
    lean ground beef
  • 2 c
    eggplant, pared, finely chopped
  • 1/2 c
    onion, chopped
  • 1 large
    egg
  • 1/2 c
    milk
  • 1/4 c
    quick cooking oats
  • 1.5 tsp
    salt
  • 1/2 tsp
    basil, leaves
  • 16 oz
    can stewed tomatoes
  • 1
    garlic clove, minced
  • 1 Tbsp
    cornstarch
  • 3/4 tsp
    salt

How to Make Surprise Meat Loaf Squares

Step-by-Step

  1. Heat the oven to 350 degrees.
  2. Mix the meat, eggplant, onion, egg, milk, oats, 1 1/2 teaspoons salt and the basil together.
  3. Spread the mixture into an ungreased baking pan 8x8x2 or 9x9x2-inches.
  4. Bake uncovered for 45 to 50 minutes.
  5. Drain off the excess fat.
  6. Mix the tomatoes, garlic, cornstarch and 3/4 teaspoon salt in a small saucepan.
  7. Cook, stirring constantly, until the mixture thickens and boils.
  8. Boil and stir for 1 minute.
  9. Cut the meat loaf into squares and top with the tomato sauce when you serve it.
  10. NOTE: Any type of summer squash can be substituted for the eggplant in this recipe.
