There are lots of recipes for this "foolproof" method of roasting a prime rib. This one is set apart by the seasonings used to coat the beef. But the method stays the same as those hundreds of others. The key is to NOT open the oven door.

Ingredients
- 5 pounds prime rib roast
- 1/2 cup unsalted butter, softened
- 2 tablespoons Kosher salt
- 2 tablespoons coarse ground black pepper
- 1 tablespoon smoked paprika
- 1 teaspoon minced thyme leaves
- 1 teaspoon minced rosemary
- 6 cloves garlic, minced
- 2 teaspoons mesquite steak seasoning (optional)
- 1 tablespoon olive oil
How To Make super easy always perfect prime rib roast

Step 1Remove roast from the refrigerator at least 3 hours (up to 4) before ready to roast. It must be room temperature in order to cook evenly.

Step 2Preheat the oven to 500 degrees F. Meanwhile, whisk together the remaining ingredients until they are smooth. Rub the roast all over until it is evenly coated on all sides.

Step 3Place the meat in a roasting pan, rib side down. Sprinkle the top generously with more Kosher salt or sea salt.

Step 4Roast for 5 minutes per pound. So... a 5-pound roast for 30 minutes, a 6-pound roast for 35 minutes, etc.

Step 5Turn off the oven. DO NOT OPEN THE OVEN DOOR! Let it sit in the oven for 2 hours. REPEAT - DO NOT OPEN THE OVEN DOOR DURING THIS TIME!

Step 6Remove the roast from the oven. Tent with foil and let rest for 10 minutes. The internal temperature of the roast should be around 130 degrees for medium rare.
