These are so yummy you won't want to use any other recipe. This features Rice a Roni's Spanish Rice which is awesome even though it's a boxed rice mix. I make it all the time and it's a wonderful addition to the stuffing in the pepper! This is a hearty dinner, so bring on your appetite!

Ingredients
- 2 boxes rice a roni spanish rice
- 4 - large green bell peppers
- 2 pounds ground beef
- 2 - small onions, diced
- 2 cans petite diced tomatoes w/garlic & olive oil
- 1/2 cup parmesan cheese, freshly grated
- 1/2 cup extra-sharp cheddar cheese, shredded
- 1/2 cup mozzarella cheese, shredded
- - salt & pepper to taste
How To Make stuffed peppers

Step 1Cook rice according to package directions. In another pan, brown the ground beef, along with the onions, and salt & pepper. When rice is done cooking, add can of tomatoes, parmesan cheese and the cooked ground beef, and mix all together. Turn the heat down to low and cover. Hollow out your green peppers. In a large pot, fill halfway full with water and bring to a slight boil, then add the green peppers. Leave them in the water for 10-15 minutes or until they are slightly tender. In a baking dish, put a layer of the rice mixture down, then take the green peppers out of the water and stand them up in the middle of the rice in the baking dish. Fill peppers with remaining rice mixture, then sprinkle both cheeses on top. Bake in a pre-heated 350 degree oven for 15 minutes.
