stuffed peppers
A northern Italian stuffed pepper recipe my grandmother made. A delicious accompaniment is small shell pasta with sautéed spinach in aioli.

Ingredients
- 1 lb. - ground beef
- 1/4 small - onion chopped finely
- 1/2 tsp - salt
- 1/2 tsp - pepper
- I medium - eggplant
- 3 - bell peppers
- 1/2 cup - pecorino romano cheese grated
- 3/4 cup - breadcrumbs
How To Make stuffed peppers

Step 1Cut peppers in half and discard seeds and stem. Place in 9” X 13” baking pan.

Step 2Peel eggplant and cut into chunks, put in pot, add water and cook until tender

Step 3Place ground beef, onion, salt and pepper in large skillet and cook until onion is translucent and pink is gone from meat. Use a spatula to move meat around as it cooks.

Step 4Drain tender eggplant and put in bowl, using an immersion blender, blend until smooth. Add to ground beef. Mix well. Add remaining ingredients and mix well.

Step 5Spoon into halved peppers. Cover with foil and bake in 350 degree preheated oven for 30 minutes, then uncover and bake an additional 30 minutes.
