This is super easy and super quick. I also like to cut cut the tops off and empty the inside of the bell peppers. This way an individual can have a whole pepper.

  • 2 large
    green bell peppers
  • 1 c
    tomato-basil pasta sauce
  • 3/4 lb
    ground sirloin
  • 1/4 c
    chopped onion

    dried italian seasoning

  • 1/4 tsp
  • 1
(8.8oz) precooked whole grain brown rice

How to Make Stuffed Peppers

  1. Cut bell peppers in half length wise; discard seeds and membranes. Place bell pepper halves, cut side up, in an 11"x17" baking dish. Microwave at high 6-7 minutes or until tender.
  2. While peppers cook, heat a large nonstick skillet over medium high heat. Cook beef and onion until browned, stirring to crumbled beef. Drain if necessary; return to pan.
  3. Stir in dried Italian seasoning, salt, pepper, rice and pasta sauce. Cook 1-2 minutes or until warm, stirring occasionally.
  4. Fill bell pepper halves with beef mixture; sprinkle evenly with cheese. Microwave at HIGH 2-3 minutes or until cheese melts.
