Ingredients

  • 2 lb
    ground beef
  • 2 pkg
    taco seasoning mix
  • 1 1/2 c
    water
  • 8 large
    pablano peppers
  • 2 c
    cooked rice
  • 3 c
    shredded mozzarella cheese
  • 1 can(s)
    diced tomatoes
  • 1 tsp
    salt

How to Make Stuffed Pablano Peppers

Step-by-Step

  1. Wash peppers and slice in half, remove seeds.(wear rubber gloves to prevent peppers from burning your hands)Set aside.
  2. Brown groundbeef and drain,add taco seasoning mix and water.Stir and simmer abt 5 minutes. Remove from heat.Add cooked rice,salt and shredded cheese, stir well.Spoon groundbeef mixture into peppers, place in large covered microwave dish.Pour tomatoes on top, microwave for 20-30 minutes.Serve with taco chips or corn chips.
