stuffed meatballs

Saw this on Diners, Drive Ins and Dives. These are so good. My hubby loves them. Made these last night, was going to post a pic but forgot.

Ingredients

  • 1 pound 80/20 ground beef
  • 1 pound 93 / 7 ground beef
  • 5 - eggs
  • 2 cups seasoned breadcrumbs
  • 1 cup grated parmesan
  • 2 tablespoons dried parsley
  • 2 teaspoons garlic salt
  • 1 teaspoon pepper
  • 1 cup shredded mozzarella
  • 5 slices sharp provolone, diced
  • 5 slices capicola,diced
  • 5 slices black forest ham,diced
  • 5 slices genoa salami,diced

How To Make stuffed meatballs

  • Step 1
    Preheat oven to 350
  • Step 2
    Combine the ground meat and eggs mix well. Add the breadcrumbs, mix well. Add the parmesan, parsley, garlic salt and pepper mix well.
  • Step 3
    Scoop out 18 meatballs, I used my ice cream scooper.
  • Step 4
    Mix the mozzarella, capicola, provolone, ham and salami. Stuff each meatball with 1 Tbs of meat and cheese.
  • Step 5
    Bake , covered with foil for 45 minutes
