I love stuffed peppers. These are very simple to make and simply delicious.

  • 8 medium
    green peppers
  • 1 1/2 lb
    ground beef
  • 3/4 c
    minute rice
  • 1 1/2 tsp
    salt and pepper
  • 2/3 c
    chopped onion
  • 2 can(s)
    10 3/4 oz cans tomato soup
  • 1 1/2 c
  • 2 large
    eggs slightly beaten.

How to Make Stuffed Green Peppers


  1. Remove top and seeds from 8 bell peppers.
  2. Mix Beef, rice, salt and pepper, egg and 1/3 cup of soup.
  3. Stuff peppers lightly and place on rack in pressure cooker. Top with 1 tablespoon full of soup on top of each. Mix remaining soup with water and pour into pressure cooker.
  4. Cover, set pressure control for 10 and cook 10 minutes after control starts giggling. Cool per pressure cooker directions and serve.
