stuffed green peppers
For once, I'm putting my own made-up recipe. Ok, I'm actually combining two recipes, but I'm totally claiming credit for the end result. I found MY favorite recipe in the Great American Recipes card collection years ago. My husband had us try one recently in our Best-Loved Casseroles cookbook. We each had things that we "preferred" in our favorites or "didn't like" in the others, so we worked together to bring the two into something that we would both love. And it worked!

Ingredients
- 4 - green peppers
- FILLING:
- 1 pound ground beef
- 14 ounces spaghetti sauce
- 1/2 cup rice
- 1 - onion, chopped
- 1/2 cup celery, chopped
- 1 - egg
- 3 tablespoons half-and-half
- 3 tablespoons fresh parsley, chopped
- 1/2 teaspoon salt
- - pepper
- - cayenne
- 8 slices swiss
How To Make stuffed green peppers

Step 1Slice green peppers down the middle and remove seeds and core. In a large mixing bowl, combine ground beef, spaghetti sauce, rice, onion, celery, egg, half-and-half, parsley, pepper, and cayenne. Fill green peppers with meat mixture, mounding a little on top of each. Filling will shrink when baked. Place green peppers in an ovenproof dish, large enough to hold peppers upright. Place slices of cheese on peppers. Bake at 400*F for about 35 minutes or until filling is set and cooked through and peppers are tender.
