stuffed green peppers
This was a recipe I got while I was a Longaberger Consultant, it was one of Grandma Bonnie's recipes, and she called green peppers Mangos. It was rather confusing, so when I altered my recipe, I wrote it with green peppers.

Ingredients
- 7 - green peppers
- 2 pounds hamburger (i used the 3 pound roll)
- 2 - eggs
- 1-2 large diced onion (i used 2)
- 1 cup cracker crumbs (i used more to get the texture since i used more beef)
- - salt and pepper
- 1 jar tomato juice (i used v-8)
How To Make stuffed green peppers

Step 1Cut peppers in half lengthwise and rinse. Place in a pot and cover with water. Bring to a boil, drain and rinse with cold water. In a bowl, m ix beef, eggs, onion, cracker crumbs and salt and pepper to your taste. Add a little tomato juice to moisten. Stuff pepper halves with the mixture. Place in a baking dish and pour tomato juice over them, but so as not to cover. Bake at 350 degrees for 1 1/2 hours.
