This is a slow cooked meal that is so tender and easy to make. You do not add any liquid to it as the moisture comes from the meat.

Ingredients

  • 1 package crushed corn bread stuffing or you can make your own. i have done both.
  • 1 cup chopped onions
  • 1 cup chopped celery
  • 1/4 cup minced fresh parsley or tsp of dried
  • 1 - egg
  • 1 1/4 cups low sodium beef broth
  • 1/3 cup melted butter
  • 1/2 teaspoon seasoned salt
  • 1/2 teaspoon pepper (i used the coarse kind)
  • 1 - flank steak about 1 1/2 pounds

How To Make stuffed flank steak

  • Step 1
    In a large bowl, combine stuffing, onion, celery and parsley. In a small bowl, beat the egg; stir in broth and the melted butter. Pour over stuffing mixture. Sprinkle with seasoned salt and pepper; mix well.
  • Step 2
    Pound steak to 1/2 inch thickness. Spread 1 1/2 cups stuffing mixture over steak. Roll the steak up starting with the short side; tie with cooking string. Place in a 5 quart slow cooker. Any remaining stuffing can be wrapped tightly in foil and placed over the rolled steak. Cover and cook on low for 6 to 8 hours. (Since I work it cooks for almost 8 hours). Remove the string before slicing.

    I love my slow cooker as it allows me to make great meals during a work week!!!!
