Stuffed Flank Steak
1 pkgcrushed corn bread stuffing or you can make your own. i have done both.
1 cchopped onions
1 cchopped celery
1/4 cminced fresh parsley or tsp of dried
1 1/4 clow sodium beef broth
1/3 cmelted butter
1/2 tspseasoned salt
1/2 tsppepper (i used the coarse kind)
1flank steak about 1 1/2 pounds
How to Make Stuffed Flank Steak
- In a large bowl, combine stuffing, onion, celery and parsley. In a small bowl, beat the egg; stir in broth and the melted butter. Pour over stuffing mixture. Sprinkle with seasoned salt and pepper; mix well.
- Pound steak to 1/2 inch thickness. Spread 1 1/2 cups stuffing mixture over steak. Roll the steak up starting with the short side; tie with cooking string. Place in a 5 quart slow cooker. Any remaining stuffing can be wrapped tightly in foil and placed over the rolled steak. Cover and cook on low for 6 to 8 hours. (Since I work it cooks for almost 8 hours). Remove the string before slicing.
