Hamburger Helper is the way to go, wait until bell peppers are in season, or go to your local farmers market. such a tasty meal, and people would think you spent at least an hour making this!

  • 6 large
    peppers-green, red, yellow
  • 1 lb
    ground beef
  • 1 box
    hamburger helper cheesy enchillada flavor
  • 2 c
    shredded mexican cheese blend

How to Make Stuffed Bell Peppers


  1. Bring a big pot of water to a boil. Meanwhile, cut the tops off the peppers and remove the seeds.
  2. Follow directions on the hamburger helper box. Once water boils grab your tongs and dunk peppers in the water for 3-5 mins. Remove peppers from water and place upside down on a paper towel until meat and rice mixture is done.
  3. After rice is done, add 1 cup of the shredded cheese and incorporate into rice mixture and scoop into the peppers and sprinkle the tops with remaining cheese. Thats it!! Fresh, Delicious, and did I mention fresh?? You'll see...
