stuffed bell peppers

My mom, would make these stuffed peppers in the fall and winter's of Nebraska, There are many ways to make this reciepe. I change my reciepe everytime and find I like many variations of this Reciepe. Hope this dish finds its way to your dinning room table too :)

Ingredients

  • 4 large bell peppers, green,orange,red or yellow
  • 1 1/2 cups uncooked rice or oatmeal
  • 2 medium eggs
  • 1/2 medium diced onion
  • 1/8 teaspoon pepper and salt
  • 1 cup milk
  • 2 pounds of ground beef or ground turkey (uncooked)
  • 1 can 14.5 oz can of diced or crushed tomatoes
  • 2 cans 8 oz (small) of tomato juice
  • 4 tablespoons ketchup

How To Make stuffed bell peppers

  • Step 1
    Pre-heat oven to *350. In a large bowel, mix together all ingredients, except tomato juice and Ketcup. (I use may hands to stir everything evenly)
  • Step 2
    Cut in half the peppers, discard the seeds, place in a 9 x 13 baking dish, and add all the peppers, drizzel alittle oil over the top of the peppers, take your meat mixture and fill in the peppers, once all filled in, pour tomato juice over the top of the peppers and squart ketchup over the top of each pepper.
  • Step 3
    cover with tinfoil and bake for 2 hours at *350. ( When severed,I like to add a small spoon of sour cream) Optional**
