Ingredients

  • 4 slices beef top round steak, boneless
  • 2 tablespoons olive oil
  • 1 can tomato paste, 6 ounces
  • 1 teaspoon sugar
  • 1 tablespoon flour
  • - salt and pepper to taste
  • 1 - carrot, chopped
  • 2 - celery stalks, chopped
  • 1 teaspoon cinnamon
  • 1 - onion, chopped
  • 1 - garlic clove, chopped
  • - salt and pepper to taste

How To Make stuffed beef roll ups

  • Step 1
    Divide chopped vegetable-spice mixture into 4 equal portions.
  • Step 2
    Place a portion on each slice of beef and roll up, tying together with heavy string.
  • Step 3
    In skillet, brown roll-ups on both sides in olive oil.
  • Step 4
    Remove and place in casserole, adding enough water to cover.
  • Step 5
    Bring to boil, lower heat and simmer for 2 hours.
  • Step 6
    Add tomato paste, sugar, flour, salt and pepper to taste, and simmer 1 hour longer or until meat is tender.
  • Step 7
    Before serving, remove strings from roll-ups.
  • Step 8
    Serve over rice pilaf or spaghetti.
