Ingredients
- 4 slices beef top round steak, boneless
- 2 tablespoons olive oil
- 1 can tomato paste, 6 ounces
- 1 teaspoon sugar
- 1 tablespoon flour
- - salt and pepper to taste
- 1 - carrot, chopped
- 2 - celery stalks, chopped
- 1 teaspoon cinnamon
- 1 - onion, chopped
- 1 - garlic clove, chopped
- - salt and pepper to taste
How To Make stuffed beef roll ups

Step 1Divide chopped vegetable-spice mixture into 4 equal portions.

Step 2Place a portion on each slice of beef and roll up, tying together with heavy string.

Step 3In skillet, brown roll-ups on both sides in olive oil.

Step 4Remove and place in casserole, adding enough water to cover.

Step 5Bring to boil, lower heat and simmer for 2 hours.

Step 6Add tomato paste, sugar, flour, salt and pepper to taste, and simmer 1 hour longer or until meat is tender.

Step 7Before serving, remove strings from roll-ups.

Step 8Serve over rice pilaf or spaghetti.
