stuffed bacon pizza meatloaf
This was started by my son. He wanted me to make meatloaf, but use mozzarella cheese. I took it to the next level. ;)

Ingredients
- MEATLOAF
- 2 pounds ground beef
- 1 - egg
- 1 - envelope onion soup mix
- - garlic powder
- - oregano
- - basil
- - parsley
- 1 cup mozzarella cheese, shredded, divided
- 4 - strips bacon, partially cooked
- 1/2 cup pizza sauce (below)
- PIZZA SAUCE
- 1 - 14 oz. can diced tomatoes
- 1 can tomato paste
- - italian seasonings (garlic, oregano, basil, parsley)
- 2 teaspoons sugar
- - parmesan cheese
How To Make stuffed bacon pizza meatloaf

Step 1Combine all Pizza Sauce ingredients in a saucepan. Simmer for 2-3 hours to bring out the sweetness in the tomatoes. Then set aside to use in the rest of the recipe.

Step 2Mix all meatloaf ingredients in a large bowl. Take 1/2 of the meat mixture and mold it onto an oval shale in a pan. Make an indentation across the top of this, leaving raised edges.

Step 3Fill indentation with 3/4 cup shredded mozzarella cheese.

Step 4Take remaining meat mixture and cover the top of the meatloaf, making sure to seal in the mozzarella.

Step 5Top the meatloaf with the bacon. (I cut the strips in half, making 8 pieces, to fit the loaf better)

Step 6Cover the top with more pizza sauce, saving some sauce to put over the meatloaf on the plate. Cover with foil and place in 350 degree oven (or this can be cooked on a grill over indirect heat) for 1-1 1/2 hours, or until meatloaf is cooked through.

Step 7Remove foil & top with remaining shredded mozzarella. Bake until cheese is melted.
