Ingredients
- 2 acorn squash, halved and seeded
- 1 cup water
- 1/2 pound ground beef
- 1 medium onion, chopped
- 4 cloves garlic, minced
- - salt and pepper, to taste
- 1 cup cooked rice
- 1 granny smith apple, peeled, cored, and diced
- 1/4 cup pepitas
- 1 teaspoon curry powder
- 4 tablespoons brown sugar
- 4 tablespoons butter
How To Make stuffed acorn squash

Step 1Preheat oven 350 degrees F. Place the squash cut side down in a baking dish. Pour the water around the squash. Place foil over top the dish and bake for 60 minutes.

Step 2Meanwhile, cook the beef, onion, and garlic until the meat is done. Season with salt and pepper. Drain. Add the rice, apple, pepitas, and curry powder. Cook until the apple is softened.

Step 3Remove the squash from the oven. Pour out the water, turn the squash over, and season with salt. Place a Tbsp of brown sugar and a Tbsp of butter in each half of squash. Fill each half with the meat mixture and add back to oven for 20 more minutes. Serve.
