stroupe's super sonic chili
Until his recent retirement, I worked with a man who taught me much of what I know about my job and much that I've had to ignore because of my upbringing (ha)! He also makes a mean pot of chili that is a "must have" at each year's work Christmas party. He shared the recipe with me, as best he could, although his method is more "throw it in the pot and taste it 'til it works." Enjoy!

Ingredients
- 1 1/2 pounds round steak, cut into cubes
- 1 pound sausage, hot (we use jimmy deans)
- 1 large onion, chopped
- 5-6 cans chili beans (we use bush's)
- 1 can rotel tomatoes, hot
- 1 can tomatoes, diced
- 1 can tomato sauce
- SPICES TO TASTE - CUMIN, GARLIC & CHILI POWDERS, TABASCO, CAYENNE PEPPER, CHIPOTLE SAUCE

Step 1Brown the meats with the onion and drain.

Step 2Throw meats and remaining ingredients into a large pot and cook until it's ready.

Step 3This really is one of those "taste it as you put it together" recipes but it is so worth the little bit of angst you may feel over not having exact measurements. Serve it with cheese, sour cream, or try it over rice for a different twist ... but don't forget the crackers or Mexican cornbread!
