Ingredients

  • - 2 lbs. stew beef, cubed, (or lamb)
  • - 2 tbsp. olive oil
  • - 2 sticks cinnamon
  • - 2 cups beef broth, divided
  • - 4 small white onions, peeled and sliced
  • - 1 clove garlic, peeled and finely chopped
  • - 1 can tomato sauce, 8 oz
  • - 1/2 tsp. salt or to taste

How To Make stifado

  • Step 1
    Trim meat of fat. Heat oil in Dutch oven; brown meat. Add cinnamon sticks and 1 cup beef broth; cook 1 1/2 hours or til meat is tender. Add onions garlic; cook over low heat about 10 minutes.
  • Step 2
    Add tomato sauce, remaining 1 cup beef broth and salt. Cook covered, 30 minutes or til meat is very tender. Remove and discard cinnamon sticks. Serve at once. Serves 6
  • Step 3
    Stifado is a robust dish that gets its flavor from then unusual combination of cinnamon and garlic. This recipe, often handed down among families for generations is a Sunday mainstay in Greece and on the islands. It can be made with beef or lamb. The dish also freeze well.
