Ingredients For steve's pot roast

3 lbchuck roast

1 lgonion

3 stickcelery stalks

5carrots, sliced

3 clovegarlic

1 cdry red wine
-
2 canchicken broth, low salt

1 canbeef broth, reduced sodium

1 pinchkosher salt

1 pinchblack pepper
-
1bay leaf
-
1 pinchthyme, dried
How To Make steve's pot roast

1Season roast well with salt and pepper. Brown all sides. Remove from pot.

2Add to pan: onions, celery, carrots, garlic and sweat down. When caramelized, add red wine and herbs. Scrape bottom and add roast back to pot.

3Add chicken and beef broths (and water if needed) to cover. Cook 2 to 4 hours, or until tender.
