Ingredients
- 3 pounds chuck roast
- 1 large onion
- 3 sticks celery stalks
- 5 - carrots, sliced
- 3 cloves garlic
- 1 cup dry red wine
- 2 cans chicken broth, low salt
- 1 can beef broth, reduced sodium
- 1 pinch kosher salt
- 1 pinch black pepper
- 1 - bay leaf
- 1 pinch thyme, dried
How To Make steve's pot roast

Step 1Season roast well with salt and pepper. Brown all sides. Remove from pot.

Step 2Add to pan: onions, celery, carrots, garlic and sweat down. When caramelized, add red wine and herbs. Scrape bottom and add roast back to pot.

Step 3Add chicken and beef broths (and water if needed) to cover. Cook 2 to 4 hours, or until tender.
