My brother, Steve, gave me this recipe. The best pot roast I ever ate!

Ingredients

  • 3 lb
    chuck roast
  • 1 large
    onion
  • 3 stick
    celery stalks
  • 5
    carrots, sliced
  • 3 clove
    garlic
  • 1 c
    dry red wine
  • 2 can(s)
    chicken broth, low salt
  • 1 can(s)
    beef broth, reduced sodium
  • 1 pinch
    kosher salt
  • 1 pinch
    black pepper
  • 1
    bay leaf
  • 1 pinch
    thyme, dried

How to Make Steve's Pot Roast

Step-by-Step

  1. Season roast well with salt and pepper. Brown all sides. Remove from pot.
  2. Add to pan: onions, celery, carrots, garlic and sweat down. When caramelized, add red wine and herbs. Scrape bottom and add roast back to pot.
  3. Add chicken and beef broths (and water if needed) to cover.
    Cook 2 to 4 hours, or until tender.
