Ingredients

3 lbchuck roast

1 largeonion

3 stickcelery stalks

5carrots, sliced

3 clovegarlic

1 cdry red wine

2 can(s)chicken broth, low salt

1 can(s)beef broth, reduced sodium

1 pinchkosher salt

1 pinchblack pepper

1bay leaf

1 pinchthyme, dried
How to Make Steve's Pot Roast
- Season roast well with salt and pepper. Brown all sides. Remove from pot.
- Add to pan: onions, celery, carrots, garlic and sweat down. When caramelized, add red wine and herbs. Scrape bottom and add roast back to pot.
- Add chicken and beef broths (and water if needed) to cover.
Cook 2 to 4 hours, or until tender.
