My brother, Steve, gave me this recipe. The best pot roast I ever ate!

Ingredients

  • 3 pounds chuck roast
  • 1 large onion
  • 3 sticks celery stalks
  • 5 - carrots, sliced
  • 3 cloves garlic
  • 1 cup dry red wine
  • 2 cans chicken broth, low salt
  • 1 can beef broth, reduced sodium
  • 1 pinch kosher salt
  • 1 pinch black pepper
  • 1 - bay leaf
  • 1 pinch thyme, dried

How To Make steve's pot roast

  • Step 1
    Season roast well with salt and pepper. Brown all sides. Remove from pot.
  • Step 2
    Add to pan: onions, celery, carrots, garlic and sweat down. When caramelized, add red wine and herbs. Scrape bottom and add roast back to pot.
  • Step 3
    Add chicken and beef broths (and water if needed) to cover. Cook 2 to 4 hours, or until tender.
