My brother, Steve, gave me this recipe. The best pot roast I ever ate!

Ingredients

chuck roast
1 large
onion
3 stick
celery stalks

carrots, sliced
3 clove
garlic
1 c
dry red wine
2 can(s)
chicken broth, low salt
1 can(s)
beef broth, reduced sodium
1 pinch
kosher salt
1 pinch
black pepper
1
bay leaf
1 pinch
thyme, dried

How to Make Steve's Pot Roast

Step-by-Step

  • 1Season roast well with salt and pepper. Brown all sides. Remove from pot.
  • 2Add to pan: onions, celery, carrots, garlic and sweat down. When caramelized, add red wine and herbs. Scrape bottom and add roast back to pot.
  • 3Add chicken and beef broths (and water if needed) to cover.
    Cook 2 to 4 hours, or until tender.
