2 to 4 tbsp. olive oil
2 tbsp. butter
2 cloves garlic, finely chopped
fresh or dried rosemary leaves to taste
dried sage leaves to taste
2 new york or club steaks, about 1 lb. total
3 tbsp. red wine

1In skillet, heat butter and 2 Tbsp. of the olive oil over medium/high heat. Add garlic and cook for two to three minutes or until garlic is lightly browned, stirring constantly. Remove garlic. Crush rosemary and sage between your fingertips to release oils and add to the skillet. Cook for one to two minutes, stirring constantly. Season steak with salt and pepper. Increase heat to high and add steak. Cook for two to four minutes or until steak is cooked to the desired degree of doneness. Add wine, cover and cook for one minute and serve. Makes 2 servings.
