this is one of the old recipes handed from my mother its french steak dish for 2

cracked black pepper
beef top loin steaks cut 1 in thick about 1pd
2 Tbsp
1/4 c
beef broth
1/2 c
whipping cream
2 tsp
dijon-style mustard

How to Make Steak au Poivre


  • 1Sprinkle pepper evenly over both steaks both sides press in with your fingers cut a slit in each steak crosswise but dont cut entirely inhalf cook the steak to your desired doneness. Transfer the steaks to a serving platter reserving the drippings in the skillet. Keep warm. Remove skillet from burner, let stand 1 min.
  • 2For sauce, in a small bowl, combine beef broth stir into drippings in skillet, scraping up crusty brown bits. Stir in whipping cream and mustard. bring to a boil. Boil gently, uncovered, over med hi heat for5 to 6 min or until mixture is reduced to 1/2 cup, stirring occasionally. spoon over steaks
