Ingredients
- 1 tablespoon cracked black pepper
- 2 - beef top loin steaks cut 1 in thick about 1pd
- 2 tablespoons butter
- 1/4 cup beef broth
- 1/2 cup whipping cream
- 2 teaspoons dijon-style mustard
How To Make steak au poivre

Step 1Sprinkle pepper evenly over both steaks both sides press in with your fingers cut a slit in each steak crosswise but dont cut entirely inhalf cook the steak to your desired doneness. Transfer the steaks to a serving platter reserving the drippings in the skillet. Keep warm. Remove skillet from burner, let stand 1 min.

Step 2For sauce, in a small bowl, combine beef broth stir into drippings in skillet, scraping up crusty brown bits. Stir in whipping cream and mustard. bring to a boil. Boil gently, uncovered, over med hi heat for5 to 6 min or until mixture is reduced to 1/2 cup, stirring occasionally. spoon over steaks
