This sandwich is a huge hit with my family around saint patricks day. Its a bit more expensive then some lunchmeats, but corned beef is usually on sale that time of the year. Its a new take on the classic rueben (especially if you dont like saurkraut).

  • 1/2 lb
    corned beef (sliced)
  • 4 slice
    swiss cheese
  • 4 slice
    bread and butter pickles (large)
  • 1
    loaf italian bread
  • 1 tsp
  • ·
    thousand island dressing

How to Make St Patricks Day Sandwich


  1. Heat greased frying pan on high.
  2. Slice the italian loaf into thick slices. Butter both sides of each slice.
  3. Assemble sandwiches (corned beef, swiss cheese and then pickles) and place in hot frying pan. Flip when golden brown.
  4. Cook to a grilled cheese consistancy. Slice diagonally and enjoy. Dip in thousand island dressing if desired)
