This sandwich is a huge hit with my family around saint patricks day. Its a bit more expensive then some lunchmeats, but corned beef is usually on sale that time of the year. Its a new take on the classic rueben (especially if you dont like saurkraut).

Ingredients
- 1/2 pound corned beef (sliced)
- 4 slices swiss cheese
- 4 slices bread and butter pickles (large)
- 1 - loaf italian bread
- 1 teaspoon butter
- - thousand island dressing
How To Make st patricks day sandwich

Step 1Heat greased frying pan on high.

Step 2Slice the italian loaf into thick slices. Butter both sides of each slice.

Step 3Assemble sandwiches (corned beef, swiss cheese and then pickles) and place in hot frying pan. Flip when golden brown.

Step 4Cook to a grilled cheese consistancy. Slice diagonally and enjoy. Dip in thousand island dressing if desired)
