Ingredients

  • 1/3 pound spicy pork sauage
  • 2/3 pound ground chuck
  • 1 can black beans with jalapeno peppers,drained
  • 2/3 cup chopped red pepper
  • 1 small onion,chopped
  • 1 pound frozen corn kernels
  • 1/2 can enchilada sauce
  • 2 large eggs
  • 1 package flour tortillas
  • 1 package [2 cups]mexican cheese blend
  • 6 slices thin sliced bacon

How To Make spicy black bean meatloaf

  • Step 1
    spray a round bakin pan with non stick spray now lay 1 torilla in center of pan then over lappin put more in to cover bottom of pan[should be bout 1/2 of each outside pan that is ok will use later] set pan aside
  • Step 2
    in small bowl put beans mash with a fork having some still whole but some finely smashed add onion and peppers mix well
  • Step 3
    in lg bowl add pork and beef mix well add bean mix,eggs,corn,1/2 the enchilada sauce and 1/2 the cheese mix well
  • Step 4
    pour into pan with tortillas spread evenly add bacon slices fold tortillas over meat use one more to put in middle to cover all meat now add rest of cheese and sauce
  • Step 5
    have oven pre heated to 350 cover meatloaf with foil bake 45 min remove foil bake 30 min more let reast bout 10 min before slicin into wedges and servin
