spicy baked beef and rice

I threw this together a couple of nights ago and it was a super hit. This morning I used what meager left overs there were to make a Mexican omelet that turned out amazing!

Ingredients

  • 1 1/2 pounds ground beef
  • 1 cup rice- uncooked
  • 1 - onion-chopped
  • 4 slices bacon-chopped
  • 1 cup water
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 teaspoons crushed red pepper
  • 2 tablespoons fresh chopped cilantro
  • 2 teaspoons cumin
  • 1 can diced tomatoes
  • 1 cup mexican blend shredded cheese

How To Make spicy baked beef and rice

  • Step 1
    Preheat oven to 300 degrees. Over medium heat saute` ground beef, onion, rice in bacon drippings. Pour off drippings if any and add rest of ingredients except cheese. Mix Well.
  • Step 2
    Pour into large casserole dish and cover with foil or any other heat proof cover you might have that will fit. Bake 45 minutes. Remove from oven, sprinkle with shredded cheese and bake uncovered 15 more minutes or until cheese is melted.
  • Step 3
    Serve with sour cream, guacamole, salsa or your favorite hot sauce and warm flour tortillas. I like to use both medium to hot salsa and habanero sauce.
