Cheesy Shepherd's Pie

Kim Biegacki

I was on a mission tonight to make Shepherd's Pie and wanted to create the flavors of a pie I had a few days ago. Well, so far this is the closest I could come to it. I love how this cuts out a step and makes it even faster to get this meal on the table for your hungry family to eat. I did kick it up on the amount of veggies cause I know the more the healthier. Now feel free to make this your own and add the veggies you want and the seasonings you love. This is just what we love to eat but it really is a versatile meal and can be custom fit for your family too.

How to Make Cheesy Shepherd's Pie

  1. Prep up all your veggies by dicing and slicing.
Put your potatoes in steamer and cook till tender.
  2. Saute up your veggies onions, red pepper, carrots in 2 tbsp of oil or butter. Once cooked through to your liking add your seasonings and peas.
  3. While veggies are cooking add your ground beef to another pan and cook, drain and return to pan. Add your beef broth and chili sauce then mix together. Keep on low heat and add veggies when they are done. Add your cream cheese and cheddar and stir till melted.
Now depending if you need it thicker or not go ahead and add the corn starch w/water into the meat mixture to thicken. Stir till it thickens up.
  4. Prepare potatoes same time as meat mixture and mash up at same time so they will be nice and hot. You are ready to plate up your meat mixture on plate. Scoop out 2 large spoonfuls and place in center and then press out in circular shape. Add desired amt of potatoes that you want and then your toppings.
  5. Because I love onions, this one is mine topped with french fried onions. Yummm
