I have no idea how this got its name but that is what we always called it. It is a very simple recipe that can be changed by seasonings. As a kid we just used salt and pepper but now I use chili powder, garlic, and anything else that sounds good.

Ingredients
- 2 cups rice
- 1 1/2 pounds ground peef
- 1 cup celery, chopped
- 1 - onion
- - salt and seasoning to taste
- 1 quart tomato juice or 1 can tomato soup and 1 can water
How To Make spanish rice

Step 1In a sauce pan boil rice in 6 cups water for 10 min. Drain off excess water. It will finish cooking in the oven.

Step 2Brown ground beef with onion and celery. Add seasoning. If the burger is a little pink it will finish cooking in the oven.

Step 3Combine drained rice and ground beef mixture and pour in a greased casserole. It will expand so use a large enough dish. Pour tomato juice or tomato soup mixed with water over mixture. Bake covered at 350 degrees for 30 min. Check and if there seems to have a lot of liquid left uncover and bake another 15 min. If the liquid is gone check if the rice is done. If it isn't add 1/2 cup of water or tomato juice and bake 15 more min.
