Ingredients
- 3 pounds beef bottom roast, boneless trimmed
- 2 tablespoons oil
- 1 large onion, chopped
- 2 garlic cloves, minced
- 1/3 cup flour
- 1 can stewed tomatoes
- 1 can green chiles, diced and drained
- 1/4 cup water
- 1 teaspoon oregano
- 1 teaspoon cumin
How To Make southwestern simmered beef

Step 1Cut meat into 2\" pieces.

Step 2In a heavy 4 quart pot, brown meat in oil.

Step 3Add onion and garlic; cook until soft.

Step 4Sprinkle with flour; cook 2 minutes.

Step 5Add remaining ingredients.

Step 6Cover and simmer for 1 to 1 1/2 hours or more or until meat is tender.

Step 7Stir occasionally and add additional water, if needed.

Step 8To serve, garnish with a dollop of sour cream, if desired.
