Ingredients

  • 3 pounds beef bottom roast, boneless trimmed
  • 2 tablespoons oil
  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • 1/3 cup flour
  • 1 can stewed tomatoes
  • 1 can green chiles, diced and drained
  • 1/4 cup water
  • 1 teaspoon oregano
  • 1 teaspoon cumin

How To Make southwestern simmered beef

  • Step 1
    Cut meat into 2\" pieces.
  • Step 2
    In a heavy 4 quart pot, brown meat in oil.
  • Step 3
    Add onion and garlic; cook until soft.
  • Step 4
    Sprinkle with flour; cook 2 minutes.
  • Step 5
    Add remaining ingredients.
  • Step 6
    Cover and simmer for 1 to 1 1/2 hours or more or until meat is tender.
  • Step 7
    Stir occasionally and add additional water, if needed.
  • Step 8
    To serve, garnish with a dollop of sour cream, if desired.
