onion, chopped

flour

stewed tomatoes

green chiles, diced and drained

water
1 tsp
oregano
1 tsp
cumin

How to Make Southwestern Simmered Beef

Step-by-Step

  • 1Cut meat into 2" pieces.
  • 2In a heavy 4 quart pot, brown meat in oil.
  • 3Add onion and garlic; cook until soft.
  • 4Sprinkle with flour; cook 2 minutes.
  • 5Add remaining ingredients.
  • 6Cover and simmer for 1 to 1 1/2 hours or more or until meat is tender.
  • 7Stir occasionally and add additional water, if needed.
  • 8To serve, garnish with a dollop of sour cream, if desired.
