Ingredients
- 2 pounds lean ground beef
- 1/4 cup onion, chopped
- 1/8 cup green pepper, chopped
- 1 teaspoon salt
- pinch cayenne pepper
- 1/2 cup corn, frozen
- 2 - green onions, chopped
- 1 teaspoon southwest seasoning, picante seasoning
- 1/2 cup bread crumbs, plain
- 2 large eggs
- 1/2 cup picante sauce
- 1/2 tablespoon green chiles, chopped
- 1 cup monterey jack cheese, shredded
- 1/4 cup black olives, pitted and sliced
- 1 cup chili sauce
How To Make southwestern meatloaf

Step 1I used 1 teaspoon of southwest seasoning as a substitution for the picante seasoning it tasted just fine.

Step 2Preheat oven to 350 degrees.

Step 3In a large bowl, combine the ground beef, onion, green pepper, garlic, salt, cayenne pepper, frozen corn, green onion, picante seasoning, bread crumbs, eggs, picante sauce, green chiles, cheese, olives and chili sauce.

Step 4Mix well with your hands.

Step 5Place into a greased 9x5 inch loaf pan and bake for about 1 to 1 1/2 hours, until meat is no longer pink and juices run clear.
