Ingredients

3 lb
beef roast
1 can(s)
diced tomatoes
1 can(s)
ranch style beans
4 oz
chopped green chilies
1 medium
onion, chopped
2 tsp
chili powder

How to Make Southwest Pot Roast

Step-by-Step

  • 1Rinse roast and place in slow cooker.
  • 2Combine remaining ingredients in a separate bowl. Pour over roast.
  • 3Cook on low for 6 hours.
  • 4Remove roast to a platter and shred with a fork.
  • 5Return meat to slow cooker and mix with sauce.
  • 6Serve with sour cream and cheese over tortillas, taco shells, rice, or tortilla chips.
