You can serve this versatile roast with tortillas, taco shells, over tortilla chips, or rice. Saffron rice is my favorite foundation for its tender goodness.

Slow Cooker Crock Pot


  • 3 lb
    beef roast
  • 1 can(s)
    diced tomatoes
  • 1 can(s)
    ranch style beans
  • 4 oz
    chopped green chilies
  • 1 medium
    onion, chopped
  • 2 tsp
    chili powder

How to Make Southwest Pot Roast


  1. Rinse roast and place in slow cooker.
  2. Combine remaining ingredients in a separate bowl. Pour over roast.
  3. Cook on low for 6 hours.
  4. Remove roast to a platter and shred with a fork.
  5. Return meat to slow cooker and mix with sauce.
  6. Serve with sour cream and cheese over tortillas, taco shells, rice, or tortilla chips.
