  • 4 slice
  • 1 medium
    onion, finely chopped
  • 1 lb
    lean ground beef
  • 1
    garlic clove, crushed
  • 1 medium
    green pepper, finely chopped
  • 1 medium
    eggplant, peeled and sliced
  • 1 tsp
  • 1/8 tsp
  • 15 oz
    tomato sauce
  • 1/2 c
    feta cheese crumbles
  • 1 c
    seasoned croutons

How to Make South Of The Border Eggplant


  1. In a deep, 2-quart, heat-resistant, non-metallic casserole heat bacon, covered with paper toweling, 4 minutes or until crisp.
  2. Reserve bacon fat and remove bacon.
  3. Set aside.
  4. Add beef, onion, garlic and green pepper to reserved bacon fat.
  5. Heat, uncovered, 6 1/2 minutes or until vegetables are tender and beef is browned.
  6. Add eggplant, salt, pepper, tomato sauce, feta cheese and reserved bacon.
  7. Stir to blend.
  8. Heat, covered, in microwave oven 8 minutes or until eggplant is tender.
  9. Sprinkle with croutons and heat, uncovered, an additional 1 minute or until heated through.
