Ingredients
- 4 slices bacon
- 1 medium onion, finely chopped
- 1 pound lean ground beef
- 1 - garlic clove, crushed
- 1 medium green pepper, finely chopped
- 1 medium eggplant, peeled and sliced
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 15 ounces tomato sauce
- 1/2 cup feta cheese crumbles
- 1 cup seasoned croutons
How To Make south of the border eggplant

Step 1In a deep, 2-quart, heat-resistant, non-metallic casserole heat bacon, covered with paper toweling, 4 minutes or until crisp.

Step 2Reserve bacon fat and remove bacon.

Step 3Set aside.

Step 4Add beef, onion, garlic and green pepper to reserved bacon fat.

Step 5Heat, uncovered, 6 1/2 minutes or until vegetables are tender and beef is browned.

Step 6Add eggplant, salt, pepper, tomato sauce, feta cheese and reserved bacon.

Step 7Stir to blend.

Step 8Heat, covered, in microwave oven 8 minutes or until eggplant is tender.

Step 9Sprinkle with croutons and heat, uncovered, an additional 1 minute or until heated through.
