Ingredients

  • 1/3c
    barbecue sauce
  • 2 can(s)
    chipotle chilis (seeded)
  • 1 TBS
    adobo sauce(from the above canned chilis)
  • 2 large
    eggs
  • 1 TBS
    worcestershire sauce
  • 1/2 teas.
    salt
  • 1/4 teas.
    cloves garlic minced
  • 1 small
    onion finely chopped
  • 1 1/2 lb
    lean ground beef or turkey
  • 1 c
    quick-cooking oats
  • 3 TBS
    ketchup

How to Make Smoky Chipotle Meatloaf

Step-by-Step

  1. Heat oven to 350 degrees. spray a 9 x 5 loaf pan with cooking spray.
    combine bbq sauce, chipotles, adobo sauce, eggs, worcestshire sauce, salt and pepper in a food processor until smooth. Put in a large bowl and add oats, onion, garlic, meat,and oats and mix well, I use my hands. lightly pack into the loaf pan.
  2. Bake for 45 minutes, Spread Ketchup on top and then bake for another 10 minutes. (meat thermometer 160 degrees) let sit for 5-10 minutes then serve.
  3. Leftovers (if you have any) make great sandwiches!!!
