smokehouse bacon cheeseburgers with barbecue mayo

This barbecue cheeseburger is smokey and sweet. It's a terrific variation from a plain cheeseburger. My family loves barbecue and we're always looking for opportunities to use the sweet and smokey flavors in more than one way. Not only do we love the barbecue mayo on this burger but, it also serves as a delicious alternative to ketchup for dipping fries or potato wedges!

Ingredients

  • 1 1/2 pounds ground sirloin
  • 1 1/2 cups shredded colby-jack cheese
  • 8 slices bacon cooked and crumbled
  • 1/3 cup sweet & smokey barbecue sauce
  • 1/3 cup finely minced onion
  • 1/3 cup cold water
  • 1 1/2 teaspoons barbecue seasoning [i used barbecue magic]
  • 4 slices colby-jack cheese
  • - assorted toppings: tomato slices, lettuce, red onion, pickles
  • BARBECUE MAYO:
  • 1/2 cup mayonnaise
  • 1/4 cup barbecue sauce
  • 1/2 teaspoon barbecue seasoning

How To Make smokehouse bacon cheeseburgers with barbecue mayo

  • Step 1
    Add the first 6 ingredients to a medium size mixing bowl reserving the sliced cheese to melt on top of the burgers later.
  • Step 2
    Using your hands, mix all of the ingredients together being careful not to over mix.
  • Step 3
    Divide the meat mixture evenly and shape into 4 patties.
  • Step 4
    In a stove top grill pan, over medium-high heat, cook the burgers in a couple of drizzles of olive oil. If you choose to grill your burgers, make sure you oil the grates well before adding them to the grill. Cook on medium-high heat. If you cook the burgers over high heat, the sugar content of the barbecue sauce can burn. so, watch them closely. Cook to your desired doneness. Serve on kaiser rolls with your favorite toppings. Yield: 4 burgers
  • Step 5
    For the barbecue mayonnaise: Stir together the barbecue sauce, barbecue seasoning and mayonnaise until combined then chill until serving. Cook's note: Barbecue sauce has a high sugar content, so, be careful when cooking your burgers. They will burn easily if cooked over high heat.
