smoked summer sausage pasta salad
If you ever get a chance to smoke a log of summer sausage, it is off the hook good. I created this salad to use up leftover summer sausage, and it's really a meal in itself! You could use any cooked sausage or even bacon instead.

Ingredients
- 4 cups cooked pasta
- 2 cups smoked summer sausage, cubed
- 1 - red bell pepper, roasted
- 1 - poblano pepper, roasted
- 1/2 cup diced onion
- 1 1/2 cups grated cheddar, 2%
- 1/2 teaspoon black pepper
- 1 cup sour cream, lite
How To Make smoked summer sausage pasta salad

Step 1Cut red bell and pablano in half, remove stems and seeds. Place on baking sheet and broil for 5-7 min. till charring begins. Remove, cool, and dice. Dice onion, and grate cheese. Cube summer sausage, or any other sausage into small bite size pieces.

Step 2Place all ingredients in a large bowl, add black pepper and sour cream. Mix to combine. Refrigerate until serving.
